Special lecture on food science: Methods and new technologies for detecting preservative content in baked goods

The eighth session of the Famous Teachers and Craftsmen Leading the Way, Craftsmanship Cultivating Food Talents Food Professional Demonstration Course and Special Lecture Series of the School of Food and Pharmacy will be held on November 27, 2025 at 19:00 in Room 204, Building 10. This issue is hosted by Professor Ma Haijian, Deputy Director of the Quality Center of Shanghai Anpu Experimental Technology Co., Ltd.

Teacher Ma Haijian gave a systematic explanation on three core topics: the limit requirements for preservatives in baked goods, the standard methods for detecting common preservatives in food and related product development, and the prospect of new technologies for food preservative detection. As an important prerequisite for food safety production, the compliant use of preservatives is directly related to product quality and consumer safety. Teacher Ma, based on the current national safety standards, deeply interprets its compliance scope and dosage threshold. On this basis, the key operational points were carefully disassembled, and the application scenarios and development potential of technological innovation directions in the detection field were expanded and shared.

This demonstration class combines industry perspective and practical depth, establishing a precise connection between campus learning and industry practice. It is also supported by the practical experience and craftsmanship of renowned teachers and craftsmen, helping students to anchor their direction and improve their skills on the path of professional growth.

The Famous Teachers and Craftsmen Guide the Way, Craftsmanship cultivates Food Talents - a series of demonstration courses and special lectures in the food major, is a joint educational platform created by the college, the Shanghai Private University Development Foundation's Craftsman Plan project, the Chief Technician Studio in Jinshan District, Shanghai, and the Shanghai Lan Yan Zhi Zi Career Counselor Studio. This activity focuses on the construction of the food profession, inviting experts and teachers from various fields to give lectures, helping students solidify their professional foundation, and cultivate applied and artisan talents.
