Demonstration course for food majors: "New ideas and technological practices for the development of modern fish mince products driven by innovation"

The fifth session of the Famous Teachers and Craftsmen Leading the Way, Craftsmanship Cultivating Food Talents Food Professional Demonstration Course and Special Lecture Series of the School of Food and Pharmacy will be held on November 17, 2025 at 14:10 in the Lecture Hall of the Graphic Information Building. This issue is hosted by Professor Qiu Weiqiang, an expert in the evaluation of Shanghai Science and Technology Management Projects and an expert in the entry of the Agricultural Construction Project Management Platform of the Ministry of Agriculture and Rural Affairs. Teacher Qiu gave the topic of innovative fish mince product development to help students gain a deeper understanding of its production ideas and technical practices.

In the lecture, Professor Qiu Weiqiang started with the meaning of frozen fish paste and fish paste products, led the students to have a preliminary understanding of their composition, and then focused on the scientific connotation, functional characteristics, and new product development direction of their products, providing professional ideas for industry innovation and upgrading. Then, further focusing on the three major functions of food - nutritional function, sensory function, and health function, the key path for improving the quality of fish paste products was systematically analyzed, emphasizing the close integration of scientific theory and market demand in product development.

The lecture was full of exciting content, which not only deepened the understanding of food and medicine students on the modern development of fish paste products, but also explored their passion for exploring food science and engineering technology. The activity not only broadens students' academic horizons, but also injects new impetus into their future professional learning and practice. Looking ahead to the future, the School of Food and Drug Sciences will continue to build a more solid platform for educating students, work together with them to strengthen their professional foundation, and explore a new future.

The Famous Teachers and Craftsmen Leading the Way, Craftsmanship Cultivating Food Talents series of demonstration courses and special lectures in the food major is an important initiative jointly carried out by the college, the Shanghai Private University Development Foundation's Craftsman Plan project, the Jinshan District Chief Technician Studio in Shanghai, and the Shanghai Lan Yan Zhi Zi Career Counselor Studio. This activity aims to promote the construction of the food profession, deepen the cultivation of applied talents and professional talents with the spirit of national craftsmanship, and build a platform for the growth of professional talents that complements practice and learning.
